Eadie's Basil Pesto

Ok guys, so technically this is the recipe that I use when I make pesto, but Eadie is totally claiming it as one of hers,  it’s one of her all time favourites and not to mention ours too!

I love the ease that comes with this recipe, no fuss, all in the blender pesto. I have a Breville Boss to go that I use- very similar to the Nutri bullet, as I find the ingredients not quite filling enough to use in my actual food processor for this recipe.

Ingredients:

1/2 bunch fresh basil, approx 2 cups – you could also try kale or rocket

1/4 cup raw cashews– or other nuts, Traditionally use pine nuts, I generally just use what I have on hand.

1/2 cup parmesan cheese

Aprrox 6 -7 tbsp extra virgin olive oil- make sure you use a good quality oil

1 garlic clove, sliced

Salt and pepper

Method:

Blitz all together, and your done!

Serving suggestion:

Pasta

Dip 

Over some sourdough

Or even just as a snack with some crackers

Best served fresh, will keep in the fridge for up to 4 days, freeze for future for 1 month.
