Crispy potatoes
Who doesn’t love a baked potato?
Especially when it’s both fluffy and crispy all in one!
This recipe is super simple or can be as fancy as you want to make it! I’m working with only 4 ingredients, however feel free to get creative and top yours with optional extras!
Ingredients:
Brushed potatoes, halved (I usually allow 1 per person, then add a couple of extras)
Olive Oil
Salt & Pepper
Parmesan Cheese
Optional Extras
Oregano Flakes
Sour Cream & Sweet Chilli Sauce
Crispy Bacon, Shallots, Chiili Flakes
Method:
Wash any excess dirt from potatoes, place in a large pot of cold water and bring to the boil. (Around 15 minutes)
Pre heat oven to 200 degrees, once potatoes have softened, drain and pop aside.
Line baking tray with baking paper, pop softened potatoes on and use a potato masher to squash down onto tray. This will allow for the crispy crunch on the outside of your baked potatoes.
Drizzle with olive oil and season with S&P. ( I will often add some diced back as well, its gets a great crunch from the oven. Cook for around 20-25 minutes until crispy. For the last 5 minutes I like to add a sprinkle of fresh Parmesan.
Feel free to serve with optional extras, or these potatoes are just the perfect side for any meal.
