SIRT- Lamb & Date Kofta w' Tzatziki Rocket and Chill Buckwheat

Double or triple this recipe if you are feeding more than just yourself.
Ingredients:
Kofta
1 medjool date, finely chopped
1 tsp ground tumeric
1 tsp ground cumin
20g red onion, finely chopped
1 tsp chopped parsley
1 medium egg yolk
1 small garlic clove, crushed
150g lamb mince
Buckwheat:
30g buckwheat
1 birds eye chilli, chopped
1 tsp chopped parsley
Tzatziki:
50g natural yoghurt
20g cucumber, grated
1/2 tsp dried or fresh mint (optional)
juice of 1/4 lemon
Salad:
50g tomato. chopped
30g rocket
1 tsp extra virgin olive oil
juice of 1/4 lemon
Method:
Place all kofta ingredients into a bowl and mix well. Shape the meat into small balls with 2 spoons or pat into small sausage sizes with your hands. Place in the fridge for just 30 minutes before cooking.
Meanwhile cook the buckwheat according to packet instructions.
For the tzatziki, mix all ingredients into a small bowl and set aside.
You can either fry the lofts in a little oil in a pan, or place underneath the grill for around 8-10 minutes. Keep turning them until all the way cooked through.
Then add your chopped chill and parsley to the buckwheat , and for salad simply mix all ingredients together in a bowl.
Serve all together- enjoy!
