Prawn Linguine
Ingredients:
(Serves 4)
- 36 raw frozen prawns (around 8 per person)
- 1 packet linguine or spaghetti pasta
- 2 tbsp olive oil
- 1 tbsp butter
- 4 cloves garlic, minced
- 2 shallots, finely chopped
- 1 tsp chili flakes (optional)
- 2 cups fresh spinach leaves
- Salt and pepper, to taste
- Herbamare, for seasoning
Method:
1. Cook the pasta: Bring a pot of salted water to a boil and cook linguine/spaghetti according to package instructions. Drain and set aside, saving ¼ cup of pasta water.
2. Prepare the prawns: While the pasta cooks, heat olive oil and butter in a large pan over medium heat. Add minced garlic and chopped shallots, cooking until fragrant (around 1-2 minutes).
3. Sauté the prawns: Toss in the frozen prawns ( i do like to let them thaw out first) and cook for 3-4 minutes on each side until pink and cooked through. Add chili flakes for a spicy kick if you like!
4. Add the spinach: Stir in the spinach leaves and cook until just wilted. Season the mixture with salt, pepper, and Herbamare.
5. Combine everything:Toss the cooked pasta into the pan, adding the reserved pasta water to loosen the sauce. Mix well to coat the pasta with the prawn and spinach goodness.
6. Serve and enjoy:Plate up your prawn linguine, and finish with an extra sprinkle of Herbamare. Enjoy!
