Vanilla Chia Pots
Ingredients
5 tbsp (50g) chia seeds
1 tbsp monk fruit sweetener
1 tsp vanilla extract/flavour
¾ cup (185ml) canned coconut milk
¼ cup (60ml) water
Matcha Powder, optional
Method
In a container or jar, whisk together the chia seeds, monk fruit sweetener, vanilla extract, coconut milk, and water.
Cover and refrigerate for at least 1 hour or overnight.
Give it a stir as it starts to set—adjust the consistency by adding more liquid for a looser texture or more chia seeds for a thicker pudding.
For a matcha twist, mix in ½ tsp matcha powder before refrigerating.
Serving Suggestions
Top with your favorite add-ons like creamy yoghurt, fresh banana slices, juicy berries, crunchy granola, shredded coconut, or a drizzle of honey for extra sweetness.
