Grilled Chicken with Peanut Sauce (GF)
Ingredients
Servers 4 ( GF)
Chicken:
- 500g chicken thighs, cut into small pieces 
Marinade:
- 2 tbsp tamari 
- 2 tbsp coconut milk 
- 2 tsp fish sauce 
- 2 tbsp lime juice 
- 1 tbsp Sriracha sauce 
- 2 tsp ground ginger 
- 2 tsp ground turmeric 
- 1 tbsp monk fruit sweetener 
- 2 cloves garlic, minced 
Peanut Sauce:
- 1 cup chicken stock 
- 5 tbsp smooth peanut butter 
- 1 tbsp monk fruit sweetener 
- 1 tbsp tamari 
- 2 tsp fish sauce 
- 2 tsp Sriracha sauce 
- 1 tsp ground ginger 
- 2 cloves garlic, minced 
- 1 tbsp lime juice

Instructions
- Marinate the Chicken: 
 In a large bowl, mix together all marinade ingredients. Add the chicken and toss to coat. Cover and refrigerate for at least 2 hours, up to 24 hours. Let it stand at room temperature before grilling or air frying.
- Prepare the Peanut Sauce: 
 In a medium saucepan, combine all ingredients except the lime juice. Bring to a simmer over medium heat, stirring often. Cook for around 5 minutes until the sauce thickens. Stir in the lime juice and set aside.
- Cook the Chicken: 
 Grill or air fry the marinated chicken until golden and cooked through.
- Serve: 
 Enjoy with some cucumber, coriander a side of rice or a low-carb option like konjac noodles.
