Corn, Zucchini & Halloumi Fritters
I had to replicate these fritters the second I tasted them! Its a slightyly fancier take on my classic corn fritter. I hope you enjoy them as much I do.
Ingredients:
- 1 cup self-raising flour 
- 1 cup corn kernels (frozen is fine) 
- 1 zucchini, grated and excess moisture squeezed out 
- 100g halloumi, grated 
- ½ cup grated tasty cheese 
- 2 eggs 
- Dash of milk (if needed) 
- ½ tsp ground cumin 
- ½ tsp ground coriander 
- Salt & pepper, to taste 
- 1–2 spring onions, finely sliced 
- 2 tbsp chopped fresh coriander 
- Oil, for frying 
Method:
- In a large mixing bowl, combine the flour, corn, zucchini, halloumi, tasty cheese, cumin, and ground coriander. Stir until everything is well coated with flour. 
- Add in the eggs, spring onions, fresh coriander, and a good pinch of salt and pepper. Mix until a thick batter forms. If it feels too thick, add a dash of milk to loosen it slightly. 
- Heat a splash of oil in a non-stick frying pan over medium heat. Spoon in the batter—roughly one heaped tablespoon per fritter—and cook for 2–3 minutes on each side, or until golden brown and cooked through. 
- Serve with a side salad, sliced avocado and lemon wedge.
