Corn, Zucchini & Halloumi Fritters
I had to replicate these fritters the second I tasted them! Its a slightyly fancier take on my classic corn fritter. I hope you enjoy them as much I do.
Ingredients:
1 cup self-raising flour
1 cup corn kernels (frozen is fine)
1 zucchini, grated and excess moisture squeezed out
100g halloumi, grated
½ cup grated tasty cheese
2 eggs
Dash of milk (if needed)
½ tsp ground cumin
½ tsp ground coriander
Salt & pepper, to taste
1–2 spring onions, finely sliced
2 tbsp chopped fresh coriander
Oil, for frying
Method:
In a large mixing bowl, combine the flour, corn, zucchini, halloumi, tasty cheese, cumin, and ground coriander. Stir until everything is well coated with flour.
Add in the eggs, spring onions, fresh coriander, and a good pinch of salt and pepper. Mix until a thick batter forms. If it feels too thick, add a dash of milk to loosen it slightly.
Heat a splash of oil in a non-stick frying pan over medium heat. Spoon in the batter—roughly one heaped tablespoon per fritter—and cook for 2–3 minutes on each side, or until golden brown and cooked through.
Serve with a side salad, sliced avocado and lemon wedge.
