Corn Fritters, my all time fav!
Who doesn’t love a corn fritter. It’s something I have been making (and ordering ) for years! This here is a quick recipe for on the go, with just 4-5 main ingredients, you can whip it up in a flash! Makes 6
Blitz half the corn first, then add remaining into batter for texture.
Ingredients:
1 Cup S.R flour
1 Cup corn kernels, frozen is fine
1/2 cup grated tasty cheese
2 eggs
Dash of milk
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
Pinch of salt & pepper
1-2 Spring Onions
2 TBS chopped coriander
Oil, for frying
Method:
In a large bowl, combine flour, corn, cheese, cumin, and ground coriander. Mix well until all the corn kernels are evenly coated with flour.
Add the eggs, a generous pinch of salt and pepper, chopped spring onions, and fresh coriander. If the batter feels too thick, add a splash of milk to loosen it slightly.
Heat a drizzle of oil in a frying pan over medium heat. Spoon in the batter, one tablespoon at a time, and cook each fritter until golden brown on both sides.
Serve warm with a handful of rocket or baby spinach, and finish with a drizzle of balsamic glaze.
