Corn Fritters, my all time fav!

Who doesn’t love a corn fritter. It’s something I have been making (and ordering ) for years! This here is a quick recipe for on the go, with just 4-5 main ingredients, you can whip it up in a flash! Makes 6

Ingredients:

1 Cup S.R flour

1 Cup corn kernels, frozen is fine

2 eggs

Pinch of salt

1-2 Spring Onions

Oil, for frying

Method:

  1. Blitz flour, eggs, salt and 1/2 of the corn in a food processor or NutriBullet. Add a dash of water or milk if batter is too thick.

  2. Once mixed, add remaining corn kernels and 1-2 finely sliced spring onions.

  3. Heat oil on medium heat and add a tablespoon of the batter at a time, fry on each side until browned.

  4. Serve with a side of rocket/baby spinach , drizzled with Balsamic Glaze.

Breakfast is served. Enjoy x
