Ellie's Famous Quiches
I love that the base of this recipe is only 2 ingredients, eggs & milk! The rest is completey up to you and what you might happen to have on hand in your fridge at the time . I have halved Ellie’s recipe as I often just make 12 at a time.

Ingredients:
1/2 cup milk
2 eggs
1 tsp vegeta or chicken stock
Pepper
2 sheets puff pastry
This is the base of your quiches centre.
If you don’t have cookie cutters to cut pastry just use the circle of a coffee cup.
Optional: Approx
1/4 Feta, crumbled
15-20 cubes Pumpkin cubes, diced & baked
1/4 cup shredded ham or bacon, lightly browned with a little garlic and butter
1/2 cup grated cheese
1/2 cup spinach leaves
1 shallot
Method:
Preheat oven to 180˚ and lightly grease a muffin tray.
Whisk eggs, milk, vegeta & pepper into a glass jug, set aside.
Cut pastry rounds with a cookie cutter, or just use a standard size coffee cup to cut circles.
Place circles on top of muffin holes, let soften slightly before pushing down. Once all 12 are done, go back and press pastry lightly into tin.
Divide ingredients amongst pastry bases first, sprinkle in a little cheese and then top with eggs and milk mixture.
Cook for around 30 minutes, rotating around half way or until pasry base is browned.
Serve with a side salad, dressed with olive oil and balsamic vinegar. Enjoy!
