Eadie’s Build Your Own Poke Bowl
This one is definitely on high rotation in our house!
Eadie’s Poke Bowl is one of those easy, family-friendly meals that everyone can make their own. So many of the ingredients are things we try to keep stocked in the fridge and pantry, meaning we only need to pick up a few fresh ingredients to whip it up.

We recently had friends over and put the kids in charge of the salad prep (those pre-made kale slaw bags are a great shortcut here!) and lined everything up once prepped in a full production-line style!
Starting with our rice bases, then salads, proteins, dressings and all the delicious toppings. Everyone then had their bowls exactly to their own liking.
It’s so fresh, colourful and easy to prep! Whether you have fussy kids, hungry teens or friends coming over for dinner, its one to save for your recipe bank.
Ingredients
For the base
Sushi rice, cooked in your rice cooker
orKonjac noodles for a low carb option
Protein options
Fresh ingredients
Pineapple, diced
Mango, diced
Edamame beans, blanched
Carrots, grated, finely sliced or spiralled
Avocado, sliced
Cucumber, diced or sliced
Purple cabbage, finely shredded
Tip: A bag of Coles kale slaw also makes a fab, easy shortcut!
Dressings and toppings
Seaweed snack sheets
Seaweed salad ( Asian Grocer)
Kewpie mayonnaise
Sesame mayonnaise
Poke sauce
Bonito flakes
Fresh coriander
Spring onions, finely sliced
Method
1. Get your rice on
Cook your sushi rice in the rice cooker, otherwise a packet rice is also fine.
If you're using Konjac noodle, give them a quick rinse and pop to the side
2. Prep your salads and toppings
While the rice is cooking, get chopping!
Dice the pineapple and mango, blanch the edamame beans and prepare your carrots, avocado, cucumber and purple cabbage.
Place everything into individual bowls or containers so you're ready to create your own little poke bowl production line.
This is also a great job for the kids!
3. Prepare your protein
For the salmon, you can either pan-fry it or pop it into the air fryer until cooked to your liking. Finish with a drizzle of teriyaki sauce.
You can also use teriyaki chicken or keep things super simple by grabbing a BBQ chicken and shredding it up.
4. Build your bowl
Now for the fun part!
Set everything out along the bench or table and let everyone build their own bowl.
Start with:
Rice base → Salad and veggies → Protein → Sauce → Toppings
Everyone can choose exactly what they like.
Finish with your favourite toppers like sesame seeds, seaweed salad, Kewpie mayo, sesame mayo, poke sauce, bonito flakes, coriander, spring onions and pickled ginger.

You can make it as simple or as fancy as you like.
Use whatever you have in the fridge, get the kids involved in the prep and turn dinner into a fun build-your-own experience.
