Passionfruit and Raspberry Kombucha Gummies

I LOVE making this recipe! The only problem is I feel I’m making it all the time as these gummies truly will not last long at all! For this recipe grab yourself some silicone moulds ( half decent ones or your gummies will get stuck) I got mine from Daiso- so cute! Don’t worry if you don’t want to go out and buy moulds you can pour this mixture into a container, set, and then cut into gummies cubes.

Ingredients :

1 cup passionfruit- I use frozen ( frozen or fresh mangoes,blueberries,strawberries are also perfect!)

1 small can (250mls) of Raspberry & Lemonade Kombucha- any flavour is also fine, get creative.

4 TBS gelatin- the supermarket gelatine tastes a little funky to me, so get the GOOD STUFF

I use Nutra Organics Grass Fed, shop around as you can often find it at your local health food store.


Method:

  1. Place the frozen/fresh fruit in a small saucepan over low to medium heat, warm and simmer until fruit has softened, around 5-10 mins.

2. Meanwhile place a splash of the kombucha in a small bowl and sprinkle your gelatin over the top, this process is to “bloom” the gelatin. You will find that the gelatine will then firm up.

3. You want to then place the firm gelatin into softened and warmed fruit on the stove top. Turn the heat off, and keep stirring the gelatin until it has completely dissolved.

4. Remove saucepan from the heat, gradually pour in the kombucha and keep stirring until all mixed together. At this point I will transfer the mixture into a jug, I also have a small bottle so I have more control when pouring into the silicone moulds.


As mentioned if you don’t have any silicone mould just pour into a container- place in the fridge to set and then cut into gummies cubes. Should only take around 15 minutes to set, otherwise leave in the moulds and pop out as you eat them.
