Spiced Baked Beans

Spiced (optional) Baked Beans

Serves 4

Ingredients:

1 red onion, roughly sliced

1 red capsicum, deseeded, roughly sliced

2 cloves garlic, roughly chopped

olive oil

salt & pepper

1 tsp cumin

1 tsp coriander

1 tsp smoked paprika

1tsp chilli flakes, optional

2 cans cannellini beans, or beans of your choice, rinsed and drained

2 cans tinned tomatoes

To serve, Pkt rocket

Balsamic/Fig Glaze, ( I LOVE the Fig glaze from Aldi)

Sourdough

Method:

In a medium frypan I fry off the onion, capsicum and garlic in a little olive oil until slightly softened and coloured. Let it cool a little, then blitz in a bullet.

Add back into the pan with spices, stir, add tomatoes and beans. Simmer for 15 minutes.

I love to have mine with a side of sourdough and rocket with some fig glaze, a healthy, quick and tasty brunch!

Season with S&P
