Spicy Lentil and Vegetable Soup
Ingredients:
I love this recipe for a quick “me” meal, double or triple if you’re cooking for more than one.
Serves 1
1 tsp olive oil
1/2 small red onion, diced ( around 30g)
1/2 carrots, diced ( around 30g)
1/2 stick celery, diced ( around 30g)
1 small red chilli, chopped
1 garlic clove, chopped
1 tsp ground turmeric
1 tsp curry powder
500mls vegetable/chicken stock
50g red lentils, around 1/3 cup
Method:
In a small saucepan, heat oil over low heat and fry off the onion, celery and carrot just for 2-3 minutes. Add the chilli & garlic, as well as spices for another minute.
Add the vegetable stock and lentils and simmer for around 30 mins, stir often tp prevent the lentils from sticking.
Lunch or dinner is done!
