Zesty Citris Protein Balls

Makes up to 20 small balls

Ingredients:

2 TBS Honey/Rice malt/Maple Syrup

2 TBS water

2 Medjool dates

Zest and juice of 2-3 lemons or limes

1/2 cup rolled oats

2 TBS Vanilla protein powder

1/2 cup desiccated coconut/flakes- also some extra to roll balls in at the end

2 cups raw cashews

optional Pina Colada Collagen

Method:

If you have a food processor or thermo mix ( literally 10 seconds on speed 9 with my ALDI thermo) , pop all ingredients in and blitz until all combined, you will find the mixture can be a little sticky, but this is perfect.

If you don’t have one (yet!), blitz all of the dry ingredients ( in batches) first in a Nutri bullet. Then transfer mixture into a big silver bowl. On the last batch , add the wet ingredients ( water, juice, syrups, medjool dates) and then mix it all together with the back of a spatula to get a sticky consistency.

I use a tablespoon to get a consistent size , roll in the palm of my hand to get the perfect round ball and then coat in desiccated coconut. (I will often only have flakes, so will also blitz these in my bullet to break right down).

Pop into a container and refrigerate for around 30 mins, and then my dear friends you have some on to the go snacks ready to eat!

These balls are perfect to freeze, I personally love the harder texture when eating them.

*note 

Feel free to play around with flavours, lemons instead of limes, cocoa for a chocolate hit, more dates less water for more of a caramel flavour. The list goes on.
