DIY Basic Pizza/Scroll Sauce
How good is anything homemade, honestly? This simple pizza sauce has been my go-to for years! Be sure when you’re making your batch, freeze some into a small container, so there’s always some on hand for an easy, quick delicious meal.
Ingredients:
- 1 tablespoon olive oil 
- 1 small onion, chopped 
- 2 cloves garlic, crushed 
- 1 tin, crushed tomatoes 
- 1/4 cup (70g) tomato paste 
- 1 teaspoon caster sugar 
- 1 tablespoon chopped fresh/dried oregano 
- Salt and pepper, to taste 
Method:
- Heat the oil: Heat olive oil in a medium pan over medium heat. 
- Cook onion and garlic: Add the chopped onion and garlic. Cook, stirring, until the onion is soft and fragrant, about 3–4 minutes. 
- Combine ingredients: Add the crushed tomatoes, tomato paste, caster sugar, and oregano. Stir well to combine. 
- Simmer: Reduce the heat to low and simmer the mixture, uncovered, stirring occasionally, for 25 minutes or until it becomes very thick. 
- Season: Season the sauce with salt and pepper to taste. 
- Serve or store: Use immediately as a base for pasta, pizza, or other dishes, or cool and store in an airtight container in the fridge for up to 5 days. 
I always like to keep a spare in the freezer for those nights you need a quick go-to.
