Deconstructed Tacos

Oh, how our family loves a good Taco Tuesday! We’ve got a mix of preferences—one of us is all about those crunchy hard shells, another swears by the soft tortillas, and as for me, I like to keep it deconstructed! Whatever salad ingredients I have in the fridge get tossed together, and I enjoy it all on the side.

Below you have a very SIMPLE taco mince recipe that the whole family can enjoy!

Taco Mince Recipe

Serves 4-6

Ingredients:

1 TBS Olive oil

1/2 onion, diced

2 cloves garlic, crushed

500g beef mince

1 jar of salsa dip

1 cup beef stock, home made or store bought

a good pinch of both salt & pepper

optional*

1/2 diced capsicum

1/2 cup frozen corn


Method:


  1. Saute diced onion & garlic in olive oil over medium heat for around 8-10 minutes, you want the onion caramelised and the garlic to be slightly browned.

  2. Add mince, breaking up continually to get a nice consistently, we don’t like ours too chunky.

  3. Add remaining ingredients and simmer over low heat for 1 hr.

Alternately this recipe would be great with beef short ribs, place all ingredients + and additional can of crushed tomatoes over low heat and slow cook for 4-6 hours, topping with extra broth if required.


Thats it!

Super easy, no fuss about it.

Purple Cabbage

Green Cabbage

Spinach Leaves

Diced tomatoes

Salsa

Guacamole

Coriander

Lime

Tabasco Sauce/ Chili Flakes

Grated Cheese

Chargrilled chilli & garlic corn
