Cacao Bars

These buttery cake bars are now a family favourite in our house hold! I will give you the reduced sugar Keto version today, ( no guilt required) although, do feel free to make any subs if you don’t have all of the ingredients on hand! (eg. natural sweetener, sugar free chocolate) I like to mix it up with what ever sweets are on sale at the time, we are all big fans of a peppermint flavoured bar in our house!


Ingredients:

6 TBS cacao butter, approx 18 buttons

2 TBS unsalted butter, room temperature

1 tsp baking powder

6 TBSP powdered sweetener, I mill my sweetener in the Nutri bullet to create a powder

1 pinch salt

2 eggs, room temperature

1 tsp vanila extract

2 TBSP coconut cream

1/4 cup almond flour- sift

2 1/2 TBS coconut flour-sift

60g/1/4 cup dark chocolate, this is where I sub all of our favourite sugar free chocolate.

Well Naturally No Sugar Peppermint chocolate , these also come in Raspberry, Coconut & Salted Caramel!

Method:


  1. Preheat oven to 180°, line a baking tray, I actually use a banana bread tin or a brownie sized tin.

  2. Place the cacao buttons in a microwavable dish and microwave until melted, approx 1 min. Keep stirring until no lumps are left. Then stir in the butter, set aside and leave to slightly cool.

  3. In a medium sized bowl, add the eggs, vanilla, salt and your milled sweetener ( if you don’t mill it, you will just get a more gritty texture), whisk until all mixed in together, then add your coconut cream and mix again.

  4. Pour in your slightly cooled butter mix, whisk gently and then add in your remaining flours (sifted) and baking powder.

  5. Mix all together and add in your chocolate of choice, pour mixture into your lined baking tray and spread evenly.

  6. Place in the centre of the oven, bake for around 20 minutes being sure to turn halfway. Allow to cool and cut into 12 equal sized squares/rectangles depending on your tray.

These little delights are best once kept in the fried overnight, and for those counting carbs on KETO they are only 1g!! How could you not want to make them!
