Homemade Falafels Bites
Ingredients
- 225 g dried chick peas, soaked overnight 
- 1 cup parsley leaves, roughly chopped 
- 1 cup coriander leaves , roughly chopped 
- 6 shallots 
- 2 cloves of garlic , crushed 
- 1tsp sesame seeds 
- 1 tsp cumin 
- 1/2 tsp coriander 
- 1 1/2 tsp salt 
- 1/2 tsp baking powder 
- 4 tsp flour (plain/all purpose) OR chickpea flour 
- 5 tbsp water 
- Vegetable of Rice Bran oil, for frying 
Method:
Soak Chickpeas:
- Place chickpeas in a large bowl. 
- Cover with plenty of cold water. 
- Soak for 12 hours or up to 2 days. 
- Prepare Mixture: - Drain chickpeas and place them in a food processor. 
- Add all remaining falafel ingredients. 
- Blitz on high for 2-3 minutes, scraping down sides as needed. 
- The mixture should resemble smooth guacamole. 
 
- Shape Falafel: - Scoop heaped tablespoons of the mixture. 
- Shape into balls, domes, or discs. 
- Place on a tray and refrigerate for 30 minutes. 
 
- Cook Falafel: - Pour oil into a shallow saucepan and heat until small bubbles appear. 
- Slide falafels into the oil in batches. 
- Cook for about 4 minutes, using two metal spoons to roll, until deep golden and crusty. 
- Drain on paper towels. 
 
- Serve: - Serve fresh with wraps, tabbouleh, dips, and salad.Hope you enjoy! 
 
Top Tips
1. Dried chickpeas cannot be substituted with canned, it just won't work!
2. Shallots (green onions / scallions) - use only the white and light green part (oniony flavour), not the dark green part. You need about 3/4 cup
3. Baking powder - not all recipes use this. This will help , falafels will be fluffier and more moist inside, without baking powder it's more dense and a bit dough-like.
