Homemade Falafels Bites
Ingredients
225 g dried chick peas, soaked overnight
1 cup parsley leaves, roughly chopped
1 cup coriander leaves , roughly chopped
6 shallots
2 cloves of garlic , crushed
1tsp sesame seeds
1 tsp cumin
1/2 tsp coriander
1 1/2 tsp salt
1/2 tsp baking powder
4 tsp flour (plain/all purpose) OR chickpea flour
5 tbsp water
Vegetable of Rice Bran oil, for frying
Method:
Soak Chickpeas:
Place chickpeas in a large bowl.
Cover with plenty of cold water.
Soak for 12 hours or up to 2 days.
Prepare Mixture:
Drain chickpeas and place them in a food processor.
Add all remaining falafel ingredients.
Blitz on high for 2-3 minutes, scraping down sides as needed.
The mixture should resemble smooth guacamole.
Shape Falafel:
Scoop heaped tablespoons of the mixture.
Shape into balls, domes, or discs.
Place on a tray and refrigerate for 30 minutes.
Cook Falafel:
Pour oil into a shallow saucepan and heat until small bubbles appear.
Slide falafels into the oil in batches.
Cook for about 4 minutes, using two metal spoons to roll, until deep golden and crusty.
Drain on paper towels.
Serve:
Serve fresh with wraps, tabbouleh, dips, and salad.Hope you enjoy!
Top Tips
1. Dried chickpeas cannot be substituted with canned, it just won't work!
2. Shallots (green onions / scallions) - use only the white and light green part (oniony flavour), not the dark green part. You need about 3/4 cup
3. Baking powder - not all recipes use this. This will help , falafels will be fluffier and more moist inside, without baking powder it's more dense and a bit dough-like.
