Zucchini Slice
Ingredients
- 2 zucchinis, grated 
- 1 red onion, grated 
- 1 carrot, grated or spiralised 
- 1 capsicum, chopped 
- Optional extras: shallots, corn, mushrooms—whatever veggies you have on hand 
- 6 eggs 
- 1 cup self-raising flour 
- 4-6 rashers bacon, chopped 
- 1½ cups grated cheese 
- ¼ cup olive oil 
- Salt & pepper, to taste 
Method
- Preheat oven to 180°C (fan-forced). Line a slice tray with baking paper. 
- Grate and chop all veggies and set aside. 
- In a large bowl, whisk eggs and flour until smooth. 
- Add in the veggies, bacon, cheese, and olive oil. Mix well to combine. 
- Season with salt and pepper to taste. 
- Pour mixture into the prepared pan and smooth the top. 
- Bake for 25–30 minutes, or until golden and set in the middle. 
- Allow to cool slightly before slicing. Serve warm or cold.
