Zucchini Slice

Zucchini Slice

Ingredients

  • 2 zucchinis, grated

  • 1 red onion, grated

  • 1 carrot, grated or spiralised

  • 1 capsicum, chopped

  • Optional extras: shallots, corn, mushrooms—whatever veggies you have on hand

  • 6 eggs

  • 1 cup self-raising flour

  • 4-6 rashers bacon, chopped

  • 1½ cups grated cheese

  • ¼ cup olive oil

  • Salt & pepper, to taste

Method

  1. Preheat oven to 180°C (fan-forced). Line a slice tray with baking paper.

  2. Grate and chop all veggies and set aside.

  3. In a large bowl, whisk eggs and flour until smooth.

  4. Add in the veggies, bacon, cheese, and olive oil. Mix well to combine.

  5. Season with salt and pepper to taste.

  6. Pour mixture into the prepared pan and smooth the top.

  7. Bake for 25–30 minutes, or until golden and set in the middle.

  8. Allow to cool slightly before slicing. Serve warm or cold.
