The Best Baked Oatmeal

This recipe is a goodie I’ve been making for years, inspired by the lovely Lorraine Murphy! If you love a hearty breakfast that’s not only delicious but also packed with goodness to keep you fuelled throughout the day. This Baked Oatmeal Delight is one for you. It’s easy to make, versatile, and perfect for busy mornings or a wholesome snack.

Ingredients:

- 3 tablespoons butter

- 3 cups rolled oats

- 1 teaspoon baking powder

- 1/4 teaspoon salt

- 2 teaspoons cinnamon

- 1 banana, peeled and chopped

- 1 apple or pear, peeled and chopped

- 2 tablespoons dried berries or raisins

- 80g honey (I love the Capilano 200+ – the higher the MGO, the more potent the honey’s activity!)

- 2 eggs

- 2 cups milk of your choice

Method:

1. Preheat your oven to 180°

2. Place the butter in a baking dish and pop it in the oven to melt.

3. In a large bowl, mix together the dry ingredients: rolled oats, baking powder, salt, and cinnamon.

4. Add the chopped banana, apple or pear, dried berries or raisins, honey, eggs, and milk to the bowl. Mix well.

5. Once the butter has melted, remove the baking dish from the oven and tip it around so the butter coats the sides. Pour the oatmeal mixture into the melted butter in the baking dish and bake for 40 minutes, or until it’s nicely browned on top.

This baked oatmeal is perfect for on-the-go mornings. Simply reheat it in the air fryer for a few minutes, or microwave for some warmth. Top it with yogurt, fresh berries, or any other extras you love. 

It’s also a great one to freeze in portions or to pop in the school lunch boxes for a nutritious treat.
