Blueberrie Muffins

Blueberrie Muffins

One of my favourite recipes, quick on time, and easy on the ingredients (Only 6). I’ll give you a few substitutes too if you don’t happen to have all of the ingredients on hand. Blueberry Muffins to die for!

Sifting Flour


Ingredients:

2 Cups S.R Flour

3/4 Brown Sugar, or Caster Sugar

1 Cup fresh or frozen Blueberries

1 egg, beaten

3/4 cup Buttermilk, if you don’t have buttermilk try 1 Tablespoon of white/malt Vinegar in your normal milk. this will “sour” the milk, as a sub.

1/2 Cup vegetable oil, the oil acts as a binding agent, so if you don’t have any, sub it for sour cream, yoghurt, coconut oil or even mayonnaise. You won’t taste the flavours so give it a go!


Method:

1. Preheat the oven to 200 degrees, grease a muffin tin, or either line with patty cake wrappers. I will often use some baking paper cut into 2cms strips to give it a more rustic look.

2. Sift flour and sugar into a large bowl, then stir in the remaining ingredients.

3. Spoon into muffin tins, bake for around 20 minutes. Allow to cool, then pop onto a wire rack. Easy!
