Blueberry & Banana Bread

Who doesn’t love a good banana bread? I’ve shared with you before my original recipe, but this time we have a slightly healthier take if you’re watching your calories. Still with all the amazing goodness, we have subbed the butter for oil (the good oils), and used natural sweetners rather than sugar. I hope you enjoy this recipe as much as we do! James no knead bread

We were staying in an Air Bnb in Hakuba, Japan. And in the description of our Lodge, the host mentioned he baked fresh bread everyday for his guests. This was a big tick for us, being the foodies that we are, so we booked the lodge and I was determined that by the end of that week that recipe was going to be one I would remember forever! It was then that we were introduced to “James’s Bread” as we now call it in our house.

Lazy days calls for making Banana Bread

TIPS:

#1- Always remove the skin and pre chop up your rotting Bananas, place in a snap lock bag ready to freeze. There is nothing worse, then trying to peel a frozen Banana!

#2- I actually sub the Golden Syrup for Medjool Date Syrup, or any other sweetener is just fine. Honey, Rice malt, Maple Syrup

#3- If you find that your bread is browning too much on top, before the inside is cooked through. Just pop some foil over it, and continue to bake.
