Blueberry & Banana Bread
INGREDIENTS
⅓ cup melted coconut oil or extra-virgin olive oil
½ cup honey, maple syrup or ice malt syrup
2 eggs
1 cup mashed ripe bananas (around 3 average bananas) + 1 additional for topping
¼ cup milk of choice or water
1 teaspoon bicarb soda, if you don’t have any 2 teaspoons of baking powder
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon ground cinnamon, and some extra to sprinkle on top
1 ¾ cups all purpose flour, or a white whole wheat is perfect
Optional Extras: 1/2 Cup Blueberries, 1/2 Cup walnuts, sprinkle of white chocolate, chocolate chips, cranberries, the list goes on…
INSTRUCTIONS
Preheat oven to 165 degrees and grease a bread loaf pan.
In a stand mixer or large bowl, beat the oil and honey together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk. (If your coconut oil solidifies once it makes contact with cold ingredients, just let the bowl rest in a warm place for a few minutes, like on top of your stove).
Add the bicarb, vanilla, salt and cinnamon, and whisk to blend. Then with. a wooden spoon stir in the flour, just until combined. Some lumps are ok! If you’re adding any additional mix-ins, gently fold them in now.
Pour the batter into your greased loaf pan ( I will always use some baking paper to line my plan too) and sprinkle lightly with cinnamon. Grab a knife or chopstick and just swirl it through the cinnamon, I will then add 1 banana lengthways halved to decorate.
Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the loaf pan for 10 minutes, then transfer it to a wire rack to cool for 20 minutes before slicing. Enjoy!
